  • 200g orzo
  • 1 small red onion, peeled and sliced
  • 3 garlic clove, diced
  • 10g dried porcini mushrooms with 400ml boiling water
  • 250g chestnut mushrooms, sliced
  • 3 teaspoons of brown rice miso paste
  • 400g tin of coconut milk
  • a handful of spinach, chopped
  • salt and pepper
  • Juice of ½ lemon
