4 cups cooked quinoa (1 cup uncooked) just add 1 tsp turmeric to the cooking water
1.5 cups roasted butternut squash
1 cup roasted carrots
1.5 cups steamed corn
1 cup roasted yellow squash
2 cups bell peppers
1 cup chickpeas

sunshine dressing:
1/3 cup olive oil
1/4 cup tahini
2 tbsp lemon juice
1 tsp cumin
1/2 tsp turmeric
1 tsp salt
1/4 tsp pepper
