VEGAN CALAMARI 🦑 written recipe below 👇🏾

👇🏾INGREDIENTS👇🏾
-king oyster mushrooms
-1 cup veg stock
-2 tbsp vegan fish sauce
-1 sheet nori

-soy milk
-juice of 1 lemon

-1/2 cup plain flour
-1 tsp garlic + onion powder
-salt + pepper to taste
-breadcrumbs

-vegan mayo
-capers
-lemon juice
-pickles
-dill

👇🏾METHOD👇🏾
-cut the mushrooms into disks and then using a bottle lid, cut out the centre (keep them and cook them too).
-now boil the mushrooms for 10-15
minutes in the stock, vegan fish sauce and nori.
-now separately mix the wet and the dry mix and remove the mushrooms from the stock.
-now coat the mushroom the wet batter, then in the dry batter, then again in the wet batter and then finish by coating with the breadcrumbs.
-deep/shallow fry in hot oil until crispy, turn often and should take a few minutes.
-mix the ingredients for the tartare sauce and serve with the crispy calamari rings.
