VEGAN CEASER SALAD 🌱🥗 using aquafaba as a dressings + mushroom meat 🤩

Inspiration from a creation by @sophiewyburd over at @mobkitchen / @veganmob 🫂

👉🏾INGREDIENTS👈🏾
dressing
-1 roasted garlic head
-1 can of chickpeas (aquafaba + chickpeas separated)
-1/2 cup olive oil
-3 tbsp nutritional yeast
-2 tbsp lemon juice
-salt + pepper to taste

mushroom chick’n
-oyster mushroom clusters
-1 tbsp soy sauce
-1 tbsp liquid smoke
-1 tsp garlic powder
-1 tsp onion powder
-4 tbsp cornflour

rest of the salad
-baby gem lettuce
-handful of croutons

👉🏾METHOD👈🏾
Caesar dressing
-wrap the garlic head in foil + coat with oil then bake for 30-40 minutes @ 200°
-place all of the ingredients for the dressing in a blender and blend until smooth. Use a hand blender afterwards to blend for a few seconds to thicken up, if necessary.

mushroom chick’n
-using your hands shred the mushrooms into strips + then marinate in soy sauce, liquid smoke, garlic + onion powders for as long as possible then remove the marinade and coat in cornflour before frying until crispy.

assembling the salad
-shred + wash the lettuce and place in a large mixing bowl then top with the mushrooms, Caesar dressing + croutons! 😊
